Cheesecake Stuffed Red Velvet Waffles With Cream Cheese Icing Drizzle
1. Make the Cheesecake Filling:

Yield: 3-4 waffles
For The Waffles
- 1 cup 125g all-purpose flour
- 2 tbsp 15g cocoa powder
- 2 tbsp 25g sugar
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 3/4 cup 180ml buttermilk
- 3 tbsp 45ml vegetable oil or melted butter
- 1/2 tsp vanilla extract
- 1 1/2 tsp red food coloring
For the Cheesecake Filling:
- 3 oz 85g cream cheese, softened
- 2 tbsp 15g powdered sugar
- 1/4 tsp vanilla extract
For the Cream Cheese Icing Drizzle:
- 2 oz 57g cream cheese, softened
- 1/4 cup 30g powdered sugar
- 1-2 tbsp milk to thin
- 1/4 tsp vanilla extract
In a small bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
Transfer to a piping bag (or a resealable plastic bag with the tip cut off) and refrigerate until ready to use.
Make the Waffles:
In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the eggs, buttermilk, oil, vanilla extract, and red food coloring.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Preheat your waffle iron and grease it lightly with nonstick spray or melted butter.
Assemble and Cook:
Spoon about 1/4 cup of waffle batter onto the preheated waffle iron and spread slightly.
Pipe a swirl or dollop of the cheesecake filling in the center, avoiding the edges.
Add another small scoop of batter on top to cover the cheesecake filling.
Close the waffle iron and cook according to the manufacturer’s instructions, until the waffles are crisp and cooked through.
Make the Cream Cheese Icing:
In a bowl, beat the cream cheese and powdered sugar until smooth.
Add the vanilla and 2 tablespoons of milk, mixing until the icing is thin enough to drizzle. Add more milk if needed.
Serve:
Drizzle the warm waffles with the cream cheese icing.
