Cinnamon Swirl Banana Bread

Ingredients

For the Bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter room temperature
  • 3/4 cup brown sugar
  • 2 large eggs
  • 4 ripe bananas mashed
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

For the Cinnamon Swirl:

  • 1/3 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, cream the butter and brown sugar together until light and fluffy. Beat in the eggs, one at a time, then stir in the mashed bananas and vanilla extract.
  • Gradually add the dry ingredients to the banana mixture, mixing just until combined. Fold in the sour cream.
  • In a small bowl, mix the granulated sugar and ground cinnamon together.
  • Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter.
  • Pour the remaining batter on top and sprinkle with the rest of the cinnamon sugar mixture.
  • Use a knife to gently swirl the cinnamon sugar through the batter.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
