Valentine Waffles with Berries and Cream

Ingredients

For the waffles:

  • - 2 cups all-purpose flour
  • - 2 tablespoons brown sugar
  • - 1 tablespoon baking powder
  • - 1/2 teaspoon salt
  • - 2 large eggs
  • - 1 3/4 cups oat milk
  • - 1/2 cup vegetable oil or melted butter
  • - 1 teaspoon vanilla extract
  • - pink food colouring

For the berry topping:

  • - ½ cup strawberries hulled and sliced
  • - ½ cup raspberries
  • - Whipped cream store-bought or homemade
  • - Optional: powdered sugar for dusting

Instructions

Make the Waffle Batter:

  • - In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • - In another bowl, beat the eggs, then add the milk, vegetable oil (or melted butter), and vanilla extract. Mix well.
  • - Pour the wet ingredients into the dry ingredients and stir just until combined. Be careful not to overmix; a few lumps are okay. Add a few drops of food colouring and give it a stir.

Cook the Waffles:

  • - Preheat your waffle iron according to the manufacturer's directions.
  • - Lightly grease the waffle iron if necessary.
  • - Pour the batter onto the preheated waffle iron (about 3/4 cup, depending on the size of your iron) and close the lid. Cook according to the waffle iron instructions until golden brown and crispy.

Assemble the Dish:

  • - Serve the waffles warm, topped with sliced berry strawberries and raspberries and a generous dollop of whipped cream.
  • - Optional: Dust with powdered sugar before serving.
