Welcome to Laid Back Bites! I’m Sarah Lee, a busy ER doctor who works the night shift and knows what it’s like to struggle with mealtime. Between long hours and unpredictable schedules, eating well often feels like an afterthought.
For the longest time, I relied on DoorDash to solve my dinner dilemmas. But when you work the night shift, the options for takeout are slim to none—unless you’re okay with vending machine snacks or yet another gas station sandwich. That’s when I realized I needed to find a better way. I had to learn how to cook meals that fit my busy lifestyle, and Laid Back Bites was born out of that journey.

Keeping It Real
I’m not a chef, and I don’t have hours to spend perfecting recipes. I’m just someone who’s figured out how to make cooking work for my chaotic schedule. I bring my food to work because I have to, and now I love it because I get to eat meals that are better than anything DoorDash could deliver. If I can make it work, you can too!
